Hyderabadi Khichdi with Khatta

Description

Truefarm organic Basmati Rice and Truefarm organic Toor dal, are used to make this pleasant looking plate of culinary comfort food. This mellow dish is found in kitchens all over India in various avatars.

Hyderabadi khichdi is different from the soft varieties consumed in the north and east. Khichdi is made with toor dal, and is dry like a pulao.  Shah jeera, along with whole spices is added in the tempering. It is served with, khatti dal or a till khatta.

ingredients

  • 2 cups long grain Truefarm organic basmati rice
  • 1 cup Truefarm Foods Organic Toor Dal
  • 2 tbsp ghee
  • 2 bay leaves
  • 2- 3 star anise
  • 4- 5 cloves
  • 7-8 black peppercorns
  • 1 tsp black cumin seeds
  • 4 green chillies slit
  • 2 medium onions sliced
  • Salt to taste
  • ½ tsp turmeric powder
  • 1 tsp ginger and garlic paste each
  • ½ cup yoghurt beaten
  • 2 tbsp mint and coriander leaves finely chopped
  • 5 cups of water
  • KHATTA INGREDIENTS
  • 4 tbsp tamarind paste
  • 1 cups water
  • 1 tbsp mint and coriander finely chopped
  • 1 medium onion finely chopped
  • ½ tsp ginger and garlic paste each
  • 2 tbsp sesame seeds roasted a ground to a fine paste
  • FOR TEMPERING
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • Few curry leaves
  • 2 green chillies finely chopped
  • Salt to taste

Directions

Heat some oil then add bay leaf, star anise, peppercorns, cloves.

Add the shah jeera and onions saute them until they turn pink in colour. Don’t overcook onions. Add garlic paste and ginger paste, saute them for few seconds.

Add turmeric, yoghurt once masala starts leaving the oil to add the soaked rice and tuvar dal. Add salt and mix everything and add water, mint leaves, coriander leaves, green chillies.

Cover it with a lid and let it cook.

Once the water is absorbed by the rice, Pour a spoonful of ghee on the top and cover it with a lid and cook for 2 minutes on low flame.

Method to prepare Khatta-

Roast sesame seeds and let them cool off. Grind it into powder.

In a pan add onions, tamarind paste, mint leaves, coriander, ginger and garlic paste and powdered sesame seeds, water and salt. Mix it well, cover it and let it cook

Heat some oil add cumin seeds, slit green chillies, curry leaves and add the tempering into the khatta. Hyderabadi Khichdi and Khatta are ready to be served.
